You should try Windows 10 in Tablet Mode, if you hide the taskbar in Tablet Mode, it should give you roughly the same experience as Windows 8. I too think Windows 8 was something special, but it’s more-or-less intact in Windows 10.
Alos, not getting updates is huge, not only does that mean security issues are bound to come up and your data isn’t secure, it also means that drivers and software updates can’t improve performance and fix issues that could cause crashes. Your instincts may tell you to stay on Windows 8, but good sense should tell you to always run the latest versions of your software.
